How do you make your sushi rice? I've always used the powder mix that come in that bright orange packet. Does the rice taste far superior if one uses individual ingredients?

Lastly, what type of rice are you using? Myself: Kokuho Rose because its available in smaller bags! lol!

Also, does anyone try and make their rice the night before? If so, can you leave it covered, not-refridgerated for the morning assembly? I know refridgerated rice isn't too good the day after.
